Hooray for another Friday! It's pretty fun to celebrate with these recipe posts, and because I usually do my grocery shopping on Fridays it's nice to get inspiration before the weekend. I'll be honest - I didn't think I was going to be able to make time for another recipe this Friday, but one morning I woke up inspired to try something new for breakfast. A few minutes later I was pulling out my camera and the rest is history...and now on the blog today :)
I have been hearing about matcha green tea powder for quite some time, but to be honest I looked at the cost and got scared I wouldn't actually like it. Eventually I broke down and bought some just to try it, and so far I've enjoyed it sparingly in smoothies. I probably need to branch out a little more so if you have some good matcha recipes, pass them along! By itself it tastes like intense green tea, but it is definitely a good pick-me-up in the mornings since it has natural caffeine.
Needless to say, I was highly intrigued by this smoothie bowl recipe (and the idea of smoothie bowls in general!) in the Oh She Glows Everyday Cookbook. Since I eat my smoothies with a spoon anyways, it wasn't a big leap to stick them in a bowl and add toppings. Between her suggestions and what I have in my cupboard, it can make for a pretty delicious and varied breakfast.
One area I feel like is lacking (for me at least) is protein in these smoothie bowls, so I generally add some protein powder. I work out enough that it's necessary to pack in as much as I can, and it doesn't hurt that breakfast is just a little sweeter! My current powder is this vanilla protein which I like (and it's only sweetened with stevia) - but as I try new ones I'll update you. Anyways, without further ado here is my modified version of this delicious green smoothie bowl!
Matcha Green Tea Lime Pie Smoothie Bowl (modified from Oh She Glows Everyday)
1/2-3/4 cup almond milk
1 cup fresh baby spinach (optional - I ran out the morning I made mine)
1 frozen banana, chopped
1/4 cup avocado
1 tablespoon lime juice (plus add some zest if you have a fresh lime!)
1/2 teaspoon matcha green tea powder
1 scoop vanilla protein powder
1. In a blender combine all the ingredients and blend on high until smooth. Feel free to adjust the quantities as necessary.
2. Pour into a bowl and add toppings of your choice! I added unsweetened coconut flakes, pumpkin seeds, and hemp protein. Other ideas: chopped fruit, chia seeds, yogurt (for non-vegans), and anything else that sounds tasty!
